Who else just loves breakfast? Starting the day with something that you just love the flavour of somehow seems to just set the day up!
One of my bug-bears for people needing low FODMAP muesli options is that so many of them have either fruit or fruit juice added to them for flavour. However this inadvertently means they end up being high FODMAP.
A delicious, fruit free option is Table of Plenty’s Nicely Nutty Muesli. Ingredients wise it is a good choice for people with food sensitivities, due to it not containing wheat or dairy, it is low in fructose as it is fruit and honey free, PLUS, as almonds are 5% and cashews are 3.5%, it may be safe for those sensitive to oligosaccharides as well – so for those who have worked out their FODMAP tolerances, and who are only mild to oligosaccharides, but need to avoid fructose, this muesli is the business! Plus, it’s a good source of fibre and protein, and only has 1tsp of sugar per serve as well!
I am personally a tad in love with the great crunchy texture, and have been loving using it as part of my first meal of the day with some yoghurt and berries.
My other favourite, gut friendly way is to make Strawberry and Banana Nice-cream, and top it with a sprinkle!
How to?
Blend together:
½ just ripe banana
½ cup strawberries
½ cup kefir (or if you’re sensitive to lactose, lactose free yoghurt)
Then: Pour into a container and put in the freezer for ~90 minutes, or until just frozen. Serve in a bowl with a sprinkle of Table of Plenty Nicely Nutty Muesli on top!
