Sautéed Vegetables with Salmon
10 minutes preparation time, 10 minutes cooking time
2 fillets Salmon (approx. 120g each), cut into bite size chunks
1 tbsp olive oil (garlic infused, if desired)
1 cup green beans (150g), sliced
2 cups spinach or silverbeet, shredded
4 Brussels sprouts, quartered
80g manchego cheese, or other medium to hard cheese, grated
Cracked pepper, to taste
- Heat a large frying pan over medium heat and add oil to grease the pan.
- Add the vegetables and sauté for 3-5 minutes.
- Add the fish and continue to sauté for another 5 minutes, or until fish is cooked to your liking.
- Divide between two serving bowls and sprinkle with grated cheese.
