Salmon and Calamari Pasta
5 minutes preparation time, 5 minutes cooking time
1 cup pasta (gluten free, buckwheat noodles, or zucchini noodles)
2 tbsp garlic infused olive oil
100g fresh calamari, sliced into pieces
150g fresh salmon, sliced into bite size chunks
¼ cup black Kalamata olives, chopped
5 basil leaves, torn
1 tbsp parsley, chopped
Cracked pepper, to taste
- Bring a medium sized saucepan of water to boil. Add pasta and cook as per packet instructions.
- Meanwhile, heat oil in a large frying pan. Add seafood and stir-fry for 2-3 minutes. Add the olives, basil and parsley and cook for a further 2-3 minutes.
- Drain the pasta. Add to frying pan and combine with the seafood mix.
- Add cracked pepper to taste and serve warm.
Serving suggestion: Serve with steamed greens, such as green beans.
