Oven Baked Snapper
15 minutes preparation, 35 minutes cooking time
1.5kg whole snapper
1cm nub ginger, sliced
1 tbsp fresh coriander, torn
1 tbsp fresh basil, torn
½ cup papaya, sliced
2 tbsp extra virgin olive oil
½ cup white wine
- Pre-heat oven to 180o
- Place the fish on a large sheet of foil, and fold the edges up so no liquid can spill out.
- Arrange slices of papaya, ginger and herbs around the fish.
- Add wine.
- Fold the rest of the foil over the fish, to create a parcel, and bake in oven for 30-35 minutes.
Note: This recipe can be modified and made with individual fillets if you prefer.
