Low FODMAP Cobless Spinach Dip
5-10 minutes preparation time
250g frozen spinach, thawed
250g Liddell’s lactose-free cream cheese
250g Liddell’s lactose-free light sour cream
3-4 Massells 7 chicken stock cubes
Optional: ½ cup chopped fresh basil
Salt and pepper, to taste
Gluten-free plain rice-crackers and salad sticks to serve
- Squeeze out excess moisture from spinach, discarding any liquid.
- Mix spinach, cheese, sour cream and crumbled stock cubes in a bowl until combined. Add fresh basil if desired (a slight twist on the standard spinach cob dip).
- Season with salt and pepper.
Makes about 2 cups
Serve with crackers and salad sticks
